If you know me, you know how much I love chocolate chip cookies. They’re chewy yet crispy, buttery and sweet, ooey-gooey and oh-so chocolate-y…Tell me, what’s not to love? I’m always on the lookout for new ways (ahem, excuses) to incorporate chocolate chip cookies into my life and I think I may have found the best one yet – chocolate chip cookie bars!

Simply Delicious

You may be wondering – having spent so much time perfecting my chocolate chip cookie recipe, why would I want to mess with perfection? As a busy mom of two, I couldn’t resist how quick and easy it is to whip up a batch of these cookie bars. All you have to do is mix together the ingredients, throw them into a pan and bake. Once done, the chocolate chip cookie bars can be cut to any shape and size, meaning you can cut them as small (or, let’s be honest, as big) as your heart desires.

What Ingredients Do I Need to Make Chocolate Chip Cookie Bars?

To bake-up these yummy treats, you’ll need the following ingredients:

  • Golden cake mix
  • Vanilla instant pudding
  • Water
  • Vegetable oil
  • Eggs
  • Chocolate Chips

Lining the Pan

For this recipe, a 9 x 13 pan works best. Whenever I’m baking my cookie bars, I always make sure to line the pan with parchment paper, and that the parchment paper is also lining the pan’s edges.

To do this, just make sure that you are cutting a piece of parchment that is slightly longer than the pan itself. You don’t want the overhang to be too long, though. Be sure that nothing is touching the walls of your oven, the oven grills, etc.

I like having this overhang because it ensures my cookie batter doesn’t stick to the pan. Plus, it makes it easier to pull the baked cookie bars out of the pan to cut and serve.

Chocolate Chip Cookie Bars

I absolutely loved the way these chocolate chip cookie bars turned out (and so did my boys!). The best part of this already simple recipe is that it uses cake mix and vanilla pudding mix. These ingredients keep the cookie bars super moist and add such a unique flavour profile to them.

Ingredients
  

  • 3 cups golden / yellow cake mix approximately one box
  • 102 g vanilla instant pudding powder
  • ¼ cup water
  • ¾ cup vegetable oil
  • 2 large eggs room temperature
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350 degrees F. Line a 9 x 13 pan with parchment paper, ensuring that all edges are covered.
  • Add cake mix and instant putting into a large bowl and combine.
  • Add water, vegetable oil and eggs. Mix until all ingredients are combined.
  • Fold in chocolate chips. The batter will be very thick.
  • Pour the patter into the lined pan and spread evenly.
  • Bake 22 – 25 minutes and allow to sit for 5 minutes after taking it out from the oven. Cut into 12 – 16 bars.
