Easy Air Fryer Zucchini Fritters

These easy Air Fryer Zucchini Fritters are a great first-time recipe for those that are new to air fryers.

Ingredients
  

  • 2 medium zucchini
  • 1 tbsp salt
  • 1 egg
  • ½ cup flour
  • ½ cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ¼ tsp black pepper

Instructions
 

  • Begin by properly washing and drying your zucchini (I love using Attitude’s veggie wash for this).
  • Next, cut off the two ends of each zucchini.
  • Grate the zucchini into a large bowl and add salt. Mix together and pour into a pasta strainer lined with paper towel or a cheese cloth. Allow to sit for 10 minutes.
  • Add the strained grated zucchini back into the bowl and combine with remaining ingredients.
  • If desired, line air fryer with well-fitted parchment paper. Preheat to 375 degrees.
  • Shape the fritters by forming each one into a 1 ½ inch sphere and flatten slightly. Place gently into preheated air fryer (one layer) and bake for 17-20 minutes, flipping halfway through.
  • Allow to cool 5-10 minutes and serve with choice of dipping sauce.
