Begin by properly washing and drying your zucchini (I love using Attitude’s veggie wash for this).
Next, cut off the two ends of each zucchini.
Grate the zucchini into a large bowl and add salt. Mix together and pour into a pasta strainer lined with paper towel or a cheese cloth. Allow to sit for 10 minutes.
Add the strained grated zucchini back into the bowl and combine with remaining ingredients.
If desired, line air fryer with well-fitted parchment paper. Preheat to 375 degrees.
Shape the fritters by forming each one into a 1 ½ inch sphere and flatten slightly. Place gently into preheated air fryer (one layer) and bake for 17-20 minutes, flipping halfway through.
Allow to cool 5-10 minutes and serve with choice of dipping sauce.
